Дерево шелковицы на фарси называют “тут”. Эти деревья растут на большей части территории Ирана. Но особенно благоприятны для произрастания шелковицы запад, юго-запад и север страны. Величественные и красивые тутовые деревья здесь достигают высоты в 10 метров.

Родиной шелковицы является Китай – отсюда она и пришла в Иран. Пришла вместе с секретом производства шёлка, который многие века бдительно охранялся императорами Китая.
Как известно, нить натурального шёлка вырабатывают гусеницы тутового шелкопряда. Эти гусеницы весьма прожорливы и их разведение достаточно сложно: необходимо строго по графику и досыта кормить гусениц свежими листьями шелковицы. Малейшее несоблюдение этих требований – и гусеницы гибнут.
Попытка вывезти из Китая гусениц или яйца (грену) тутового шелкопряда немедленно каралась смертной казнью. И всё же грену однажды вывезли. По легенде, некий дервиш выдолбил серцевину своего посоха, куда и спрятал грену, а тайник в посохе запечатал воском.

Плоды шелковицы бывают чёрные и белые. Для корма шелкопрядам используются листья белой шелковицы. А её сладкими плодами, богатыми глюкозой, успешно лечат болезни дыхательных путей и язву желудка. Для здоровых же людей эти плоды – прекрасный десерт. Плоды можно и сушить. А в старину сушёные плоды белой шелковицы мололи в муку из которой выпекали вкусный и питательный сладкий хлеб.
Свежие спелые плоды чёрной шелковицы – очень вкусны. Из них часто готовят и нежный сироп, используемый для лечебных и столовых целей.
А в народной медицине Ирана находят применение листья, кора и даже корни шелковицы.

Плоды шелковицы в северной, центральной и западной части Ирана (Машхад, Исфахан, Хамадан) созревают в течение всего мая. Они сочны и нежны, поэтому сборщики под каждым деревом растягивают большое полотно, держа его за углы. С лестницы или забравшись на дерево, трясут ветви. Спелые плоды падают на полотно, а ещё не созревшие остаются дозревать.
Собранные плоды перерабатывают на месте или отправляют на рынок. Килограмм плодов чёрной шелковицы в середине мая на рынке Хамадана стоит 80.000 реалов (около 1,9 евро).

Iranian Mulberry

A tree of mulberry in Farsi is called “tut”. These trees grow in most of the territory of Iran. But the west, south-west and north of the country are especially favourable for the growth of mulberry. Majestic and beautiful mulberry trees here reach a height of 10 meters.

The motherland of the mulberry is China – hence it came to Iran. Has come together with a secret of manufacture of silk which for many centuries was vigilantly protected by emperors of China.
As you know, a thread of natural silk is produced by caterpillars of the silkworm. These caterpillars are very voracious and their breeding is quite difficult: it is necessary to feed the caterpillars strictly on schedule and to fill the fresh leaves of mulberry. The slightest non-observance of these requirements – and the caterpillars die.
The attempt to take out caterpillars from China or the eggs of the silkworm was immediately punished with the death penalty. And yet once they took the ice out. According to legend, a certain dervish hollowed out the core of his staff, where he hid the hemp, and sealed the stash in his staff with wax.

The fruits of mulberry are black and white. For silkworm feed, the leaves of white mulberry are used. And its sweet fruits, rich in glucose, successfully treat diseases of the respiratory tract and stomach ulcers. For healthy people, these fruits are a wonderful dessert. Fruits can be dried. And in the old days, the dried fruits of white mulberry were ground into flour from which they baked delicious and nutritious sweet bread.
Fresh ripe fruits of black mulberry – very tasty. Of these, often prepared and a gentle syrup, used for medicinal and table purposes.
And in folk medicine of Iran use leaves, bark and even roots of mulberry.

The mulberry fruits in the northern, central and western parts of Iran (Mashhad, Isfahan, Hamadan) ripen throughout May. They are juicy and tender, so the collectors under each tree stretch a large canvas, holding it by the corners. From the stairs or climbing a tree, they shake the branches. Ripe fruit falls on the canvas, and yet not ripe remain to ripen.
The collected fruits are processed on-site or sent to the market. A kilogram of black mulberry fruit in the middle of May in the Hamadan market costs 80,000 reais (about 1.9 euros).
